    EEX operates Europe’s leading derivatives market for dairy products & potatoes and offers exchange trading for futures on butter, skimmed milk powder, whey powder and liquid milk as well as European processing potatoes.

    All products are cash settled upon maturity. In financial settlement, reference prices are used which represent the value of the products actually traded (spot price). These price indices increase market transparency.
